White Beans

  • 2 cups white beans (pre-soaked)
  • 2 cups rice
  • 1 onion (finely chopped)
  • 2 tablespoons vegetable oil
  • 1 teaspoon tomato paste
  • Salt, pepper (optional spices)
  • 4 cups water (for boiling beans)
  • 2 cups hot water (for rice)
  • Soak the white beans in water overnight and boil until soft the next day.
  • Drain the boiled white beans and set aside.
  • Heat vegetable oil in a pot, add chopped onion and sauté until onions are pink.
  • Add tomato paste, stir, and continue to sauté over low heat until the tomato paste aroma comes out.
  • Add boiled white beans to the pot, stir, and cook for a few more minutes.
  • Add washed rice, stir, and sauté until the rice becomes translucent.
  • Add salt and spices, pour in the water, stir, and bring to a boil.
  • Once boiling, simmer over low heat until the water is absorbed. Then let the pot rest over low heat.
  • After resting, stir, transfer to a serving dish, and optionally garnish with fresh herbs before serving hot.
