White Beans
- 2 cups white beans (pre-soaked)
- 2 cups rice
- 1 onion (finely chopped)
- 2 tablespoons vegetable oil
- 1 teaspoon tomato paste
- Salt, pepper (optional spices)
- 4 cups water (for boiling beans)
- 2 cups hot water (for rice)

Soak the white beans in water overnight and boil until
soft the next day.
- Drain the boiled white beans and set aside.

Heat vegetable oil in a pot, add chopped onion and
sauté until onions are pink.

Add tomato paste, stir, and continue to sauté over low
heat until the tomato paste aroma comes out.

Add boiled white beans to the pot, stir, and cook for
a few more minutes.

Add washed rice, stir, and sauté until the rice
becomes translucent.

Add salt and spices, pour in the water, stir, and
bring to a boil.

Once boiling, simmer over low heat until the water is
absorbed. Then let the pot rest over low heat.

After resting, stir, transfer to a serving dish, and
optionally garnish with fresh herbs before serving
hot.
