Wheat Starch

  • Wheat Starch
  • 3.5 cups flour
  • 2 eggs
  • 1/4 cup vegetable oil
  • 1/4 cup vegetable milk
  • 1 tablespoon vinegar
  • 2 cups pistachios
  • A pinch of salt

  • For the Syrup
  • 4 cups water
  • 1 cup sugar
  • 1 teaspoon lemon juice

  • For the Topping
  • 250g butter
  • 1/2 cup vegetable oil
  • First, prepare the syrup. Boil water and sugar in a pot, add lemon juice. Let it cool.
  • In a mixing bowl, combine eggs, vegetable oil, vegetable milk, vinegar, and salt. Slowly add flour and knead until you get a non-sticky dough. Let it rest for 30 minutes covered with plastic wrap.
  • Divide the dough into 27 equal pieces and roll each into a ball.
  • Roll out the dough. Place the balls on a starch-sprinkled surface, roll out with a rolling pin. Stack 9 pieces on top of each other.
  • Place them in a baking dish. Lay the rolled-out dough in the baking dish, sprinkle with pistachios (or optionally walnuts).
  • Repeat the process with the remaining dough.
  • Slice the baklava, drizzle with melted butter-vegetable oil mixture, and bake in a 170°C oven for 1 hour.
  • Once out of the oven, pour the cooled syrup over the baklava. Let it rest until the syrup is absorbed.
