Wheat Starch
- Wheat Starch
- 3.5 cups flour
- 2 eggs
- 1/4 cup vegetable oil
- 1/4 cup vegetable milk
- 1 tablespoon vinegar
- 2 cups pistachios
- A pinch of salt
For the Syrup
- 4 cups water
- 1 cup sugar
- 1 teaspoon lemon juice
For the Topping
- 250g butter
- 1/2 cup vegetable oil
- First, prepare the syrup. Boil water and sugar in a pot, add lemon juice. Let it cool.
- In a mixing bowl, combine eggs, vegetable oil, vegetable milk, vinegar, and salt. Slowly add flour and knead until you get a non-sticky dough. Let it rest for 30 minutes covered with plastic wrap.
- Divide the dough into 27 equal pieces and roll each into a ball.
- Roll out the dough. Place the balls on a starch-sprinkled surface, roll out with a rolling pin. Stack 9 pieces on top of each other.
- Place them in a baking dish. Lay the rolled-out dough in the baking dish, sprinkle with pistachios (or optionally walnuts).
- Repeat the process with the remaining dough.
- Slice the baklava, drizzle with melted butter-vegetable oil mixture, and bake in a 170°C oven for 1 hour.
- Once out of the oven, pour the cooled syrup over the baklava. Let it rest until the syrup is absorbed.
