Sugar Beans

  • 500g sugar beans
  • 1 onion
  • 2 cloves of garlic
  • 1 tomato
  • 1 tablespoon tomato paste
  • 1 tablespoon pepper paste
  • 1 teaspoon cumin
  • 1 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 cup olive oil
  • Salt
  • Hot water
  • Soak the dried beans overnight.
  • Boil the soaked beans until they soften.
  • Chop the onion and garlic finely.
  • Grate the tomato.
  • Heat the olive oil in a pot.
  • Sauté the onion and garlic in the olive oil.
  • Add tomato paste and pepper paste, continue sautéing.
  • Add grated tomato and continue sautéing.
  • Add spices and stir.
  • Add boiled beans and salt, stir.
  • Add enough hot water to cover the beans.
  • Close the lid of the pot and cook the beans until they soften.
  • Once cooked, transfer the beans to a serving dish.
  • Serve with rice or bread.

  • When cooking the beans, avoid adding too much water; just enough to cover the beans will suffice.
