Semolina

  • 2 tablespoons butter
  • 2 cups semolina
  • 2 cups water
  • 1.5 cups sugar
  • Melt the butter and pour it over the semolina.
  • Cook over medium heat, stirring constantly, for 3 minutes.
  • Reduce the heat and cook for another 3 minutes. Cook until the semolina turns dark brown.
  • Add the sugar and cook for 4 more minutes.
  • Add water. (Caution: it may splatter)
  • Stir a few times and wait for it to boil.
  • Leave it slightly liquid and watery, then turn off the heat.
  • Let it rest and serve.
