Fine Bulgur
- 300 grams of minced meat
- Olive oil
- 2 tablespoons of fine bulgur for köfte
- 1 liter of water
- 1 onion
- 1 carrot
- 1 potato
- Juice of half a lemon
- 1 egg yolk
- Mint
- Zest of half a lemon
- 1 teaspoon of black pepper
- 1 teaspoon of red pepper flakes
- 1 teaspoon of salt
- 1 tablespoon of broken rice
- 1.5 tablespoons of flour
- Mix minced meat with spices (red pepper flakes, black pepper, mint, and salt) for the köfte.
- Put more than half of the thinly sliced onion into the köfte mixture, and reserve the remaining half for the soup.
- Knead the mixture thoroughly and shape it into small balls for the köfte, then place them on a tray dusted with flour.
- Heat oil in a pot, add the remaining onion and salt, then sauté the onions. After sautéing, add the carrots and potatoes.
- Once the carrots and potatoes are sautéed, add water, lemon zest, and a little more salt, and bring to a boil.
- When the carrots and potatoes are partially cooked, add the köfte to the pot. If the water reduces, add more water.
- For the sauce of the dish, beat the egg, add lemon juice, and mix. Take a spoonful of the dish's broth and add it to this mixture.
- While pouring the prepared sauce into the dish, stir it.
- Ensure that the dish is cooked again over medium heat.
- Once the dish is cooked, it's ready to serve.
