Fava Bean

  • 2 cups dried fava beans (previously soaked)
  • 1 onion (finely chopped)
  • 2 tablespoons vegetable oil
  • Salt
  • 4 cups water
  • Soak the dried fava beans in water overnight and boil them until they are softened the next day.
  • Drain the boiled fava beans and set aside.
  • Heat the vegetable oil in a pot, add the chopped onion, and sauté until the onions are golden brown.
  • Add the boiled fava beans to the pot, stir, and cook for a few more minutes.
  • Add salt and water, stir, and bring to a boil.
  • Once it boils, simmer until the water is absorbed.
  • Then let the pot rest on low heat.
  • After resting, stir, transfer to a serving plate, and optionally garnish with fresh greens before serving hot.
