Extra Fine Bulgur

  • 2 cups of fine bulgur for köfte
  • 2 cups of hot water
  • 1 tablespoon of tomato paste
  • 1 tablespoon of pepper paste
  • Half a cup of olive oil or vegetable oil
  • 1 teaspoon of isot (optional, for those who like it spicy)
  • 1 teaspoon of red pepper flakes
  • 1 teaspoon of cumin
  • 1 teaspoon of black pepper
  • 1 teaspoon of salt
  • Half a bunch of parsley (finely chopped)
  • 3-4 green onions (finely chopped)
  • Juice of 2 lemons
  • Place the fine bulgur for köfte in a bowl. Add hot water and mix. Let it sit for about 15-20 minutes for the bulgur to absorb the water.
  • Mix the tomato paste, pepper paste, olive oil, isot (if available), red pepper flakes, cumin, black pepper, and salt in a bowl.
  • Add finely chopped parsley, green onions, and squeeze lemon juice into the mixture.
  • Add the prepared sauce mixture to the rested bulgur. Knead thoroughly with your hands to ensure the bulgur is well mixed with all the ingredients.
  • Take walnut-sized pieces of the dough and roll them in your palm or shape them as desired.
  • Place the köfte on a serving plate, garnish with lemon slices and lettuce leaves, and serve.
