Extra Fine Bulgur
- 2 cups of fine bulgur for köfte
- 2 cups of hot water
- 1 tablespoon of tomato paste
- 1 tablespoon of pepper paste
- Half a cup of olive oil or vegetable oil
- 1 teaspoon of isot (optional, for those who like it spicy)
- 1 teaspoon of red pepper flakes
- 1 teaspoon of cumin
- 1 teaspoon of black pepper
- 1 teaspoon of salt
- Half a bunch of parsley (finely chopped)
- 3-4 green onions (finely chopped)
- Juice of 2 lemons

Place the fine bulgur for köfte in a bowl. Add hot water and mix. Let it sit for about 15-20 minutes for the bulgur to absorb the water.

Mix the tomato paste, pepper paste, olive oil, isot (if available), red pepper flakes, cumin, black pepper, and salt in a bowl.

Add finely chopped parsley, green onions, and squeeze lemon juice into the mixture.

Add the prepared sauce mixture to the rested bulgur. Knead thoroughly with your hands to ensure the bulgur is well mixed with all the ingredients.

Take walnut-sized pieces of the dough and roll them in your palm or shape them as desired.

Place the köfte on a serving plate, garnish with lemon slices and lettuce leaves, and serve.
