Giant Beans

  • 2 cups giant beans (pre-soaked)
  • 1 onion (finely chopped)
  • 2 cloves garlic (optional, chopped)
  • 2 green peppers (optional, chopped)
  • 2 tablespoons vegetable oil
  • 1 tablespoon tomato paste
  • 2 tomatoes (grated or chopped)
  • Salt, pepper (optional spices)
  • 2 cups hot water
  • Soak the giant beans in water overnight and boil until soft the next day.
  • Drain the boiled giant beans and set aside.
  • Heat vegetable oil in a large pot, add chopped onion, and sauté over low heat until onions are pink.
  • Add garlic and green pepper, and sauté for a few more minutes.
  • Add tomato paste and stir, then add grated or chopped tomatoes to the pot.
  • Add salt and pepper, then stir.
  • Add boiled giant beans, stir, and add hot water.
  • Let the dish come to a boil, then simmer over low heat until the water is absorbed. Stir occasionally to ensure the beans soak up the sauce well.
  • Once cooked, remove from heat, let it rest for a while, and transfer to a serving dish.
  • You can serve the giant bean dish hot. Enjoy it with rice or bread.
